Fruits contain sugar and starch. Starches are basically mono-sugars that combine to make branches of molecules. Since our cells can only absorb mono-molecules, the starch needs to broken down by enzymes. If you slow down these enzymes, less sugar and starch penetrates into the blood stream to be available to the cells. This is what olive leaf does.
